Hong Kong layover?

I have a 6-hour layover in hong kong in 2 weeks and was wondering if it would be possible to see the city a little bit. Basically, is it feasible to exit/re-enter security in that time? Also, I figure I might have time to do/see one place in that time, what would you recommend? (And how hard is it for a lone Canadian girl who speaks no Chinese to get around? I've never been to Hong Kong and don't really know much about it)
Train from airport to down town = 1 hour
Train from downtown to airport = 1 hour
Immigration and customs at airport = 1 hour
Transit times around the airport to & from the gate = 1 hour

That leaves you with = 2 hours

I think it's too risky and time too short. Just stay around the airport and do some shopping and wait till you get to your final destination.
